Desi Ghee ki Pehchan: How to Check at Home
Desi ghee ki pehchan made simple: the label, seller and price checks, the home checks that give useful clues, the popular tests that mislead, and what only a lab can tell you.
The Peshawar way to make kahwa: exact amounts per cup and for a pot of guests, the one mistake that makes it bitter, and a saffron "guest cup" for special evenings.

After a heavy dawat in Peshawar, what comes next is a small cup of kahwa: light green tea, a crushed elaichi or two, and water that has just come off the boil. This Peshawari kahwa recipe gives you exact amounts per cup, a pot for guests, the one mistake that turns kahwa bitter, and a saffron "guest cup" for special evenings. In Peshawar people often just call it sabz chai.
Per cup:

Tip: strain as soon as the colour turns pale gold.
The most common reason kahwa tastes bitter is boiling the leaves. But green tea is more delicate than black tea. In boiling water, or left too long in the pan, it turns brown, dull and bitter.

Quick fixes:
The method stays the same; only the amounts change.
Serve in small cups and pour a little at a time, the Peshawar way, rather than filling them up.
Serve with Ghunzakhi: in many Pashtun homes, a cup of kahwa is enjoyed with Ghunzakhi, a homemade sweet. Read what Ghunzakhi is and how it is served, or see our homemade Ghunzakhi.
For a special evening, turn your kahwa into a guest cup with saffron.
For more ways to use it, read how to use saffron in Pakistani cooking. Our Herat saffron (zafran) is Rs 1,200 for 1 g on the website at the time of writing (1 Nov 2026); check the product page for today's price. You can also browse all saffron.

Peshawari kahwa
Kashmiri kahwa
Plain green tea
So Peshawari kahwa is green tea made the Peshawar way: light, with elaichi as the main flavour. Kashmiri kahwa is richer and more spiced. Note that Kashmiri chai (pink tea with milk) is a different drink again.
Both work. Sugar can go into the pot after straining. For honey, add it to the cup once the kahwa has cooled a little, not into the boiling pan, so its own taste comes through. Honey in winter may crystallise in the jar; that is normal, see does real honey freeze in winter. For choosing a honey, read Sidr vs acacia honey. Do not give honey to babies under 1 year.
Kahwa is a drink, not a medicine.
Loose whole leaf is the better choice for kahwa. You can measure it per cup, the leaves open fully, and the aroma is fuller than with tea bags. Bags work in a hurry (one bag per cup), but the cup is usually flatter. Read more in loose tea vs tea bags.
Our Himalayan Green Tea Whole Leaf (450 g) is Rs 850 on the website at the time of writing (1 Nov 2026); check the product page for today's price.
